The industry has seen a consistent decline in the number of operations, matched by a rise in the number of cows per operation. Dairy products include fluid beverage milk, cheese, butter, ice cream, yogurt, dry milk products, condensed milk, and whey products.

Barbecues and char grills are too hot and will cause the marbled fat to flame and melt away, resulting in a dry steak. Instead, cook in a non-stick pan over medium heat, without any added fats. The marbled fat will baste the meat from inside as it slowly melts, resulting in a great flavour.

Surprise and disbelief. That’s what often follows when people learn about the large water footprint of many meat products. Shock is reasonable after discovering that the global average water footprint – or the total amount of water needed – to produce one pound of beef is 1,799 gallons of water; one pound of pork takes 576 gallons of water.

A key way to classify beef is by the high degree of marbling, or fat, running through the cut of meat as a result of its diet. The price of highly marbled cuts like USDA Prime, Kobe, or Wagyu beef is expensive, but the flavor and tenderness of the beef makes it worth the cost.

In 1961, poultry meat accounted for only 12 percent of global meat production; by 2013 its share has approximately tripled to around 35 percent. In comparison, beef and buffalo meat as a share of total meat production has nearly halved, now accounting for around 22 percent.

Globally, we consume 315 million tons of meat every year. In 2030 this number will be 453 million – a 44 percent increase. Projections for world meat demand, however, are uncertain, varying from 375 to 570 million tonnes by 2050, that is, an increase of 70–160 percent compared to 2000.

The trade value of the U.S. beef industry amounted to about 6.6 billion U.S. dollars in 2020. Brazil is also a major exporter of meat, both in the form of broiler chickens and beef.
